Monday was yet another opportunity for Monday Meals w/ Matt. Due to the warmer climate…I BBQ’d. We had steak with sauteed onions and peppers, potatoes and the ever popular bruschetta. The meal was great. Here’s how it looked!

No pictures tonight, just the deats.
Tonight’s menu was;
- Bruschetta with a balsamic vinegar reduction
- Cheese Ravioli with grilled chicken and spinach.
It was great. Was great to just sit down with Hailey after a busy few days and just eat a nice meal together!

It’s what is for dinner. Not exactly home cooked, but still amazing. Everyone’s got their “special place.” Ours is Red Chilie. I’ve gotten a few people hooked on it…it’s pretty much boss.

I have heard from several people “where is Monday Meals w/ Matt??” Well, here’s what’s been going on.
2 Monday’s ago, we were at my parents
Last Monday we went out for dinner with friends
This Monday I am on a cruise
SO. Monday meals with Matt will return in January 2009….stay tuned!

So this week was Pizza.
I went all out. Bought the dough, rolled it out, the whole 9-yards. On it was;
Pizza Sauce
Mozzarella Cheese
Parmesan Cheese
Artichoke
Green Olives
Sauteed Onions (yes, I sauteed them)
Sweet Italian Turkey Sausage
Ground Chicken
Sun-dried Tomato’s
It sounds way more complex and way crazier then it actually was (p.s the olives and artichokes were on Hailey’s side only…yuck).
Here’s what it looked like.
It was honestly the best pizza I’ve ever had!
Craziest part…
There was some leftover. The guys from Sleep Country Canada came to deliver our mattress (see HERE for details).
The two guys walked in the house and the one said “What the ___ is that smell…it’s AMAZING.” I told him that I had made pizza…he didn’t believe me…I gave him the leftovers and said God Bless…the guy was floored. I think he thought I was joking.
All in all, a great night. Fantastic pizza, and a new mattress.

Well, I missed last Monday because I was sick, but today I found myself at the grocery store, pondering what to make for dinner. With the help of my mom and my blackberry, I had a plan and a end-game in sight.
Tonight we had Chicken Parmigiana and Garlic Bread (stuck with the G-Bread because it went so well last time). It was very simple. Did up the chicken, put it with the sauce, baked it, cooked some noodles and voila!
Then, with some creativity via candles and a nicely set table I got this…
And it was all worth it when I got this…
All in all a great meal. It actually tasted really good (which was surprising). For dessert…Hailey and I are making a ginger bread house (saw it at the store and couldn’t resist!)

Monday was the second time Hailey and I did this.
I cook dinner from start to finish….alone.
A scary concept at first, but I think I’m getting the hang of it. I went to the grocery store to pick up my meal ingredients, and I’m not going to lie…I was pretty excited. here’s what I made.
Spinach & Ricotta Ravioli in a rose sauce and garlic bread. Seriously…it was amazing! All in all, it was a great night, and I highly recommend (to husbands) take a night once and awhile and cook for your wife. She’ll really appreciate it!
